Located in the winding sois of residential Ekkamai, Resonance is easy to miss. Apart from its understated elegance, the dark sheer facade doesn’t prepare you for the stark monochrome interior. Once inside, settle in for a culinary journey that will take you through Chef Shunsuke Shimomura’s globe-spanning career in 14 or 16 surprising courses. Also expect some lovely wines like a Tuscan 2010 Le Macchiole Paleo. The menu leans heavily on Japanese ingredients like ebi and uni, and the best little two-bite soba dish offers up a taste of the chef-owner’s home country. (There are also fine sakes in the drinks pairing.) His cultural background is far from the only source of inspiration—a deconstructed puff pastry crab pie announces a little whimsy, while a fragrant kaprao stuffed chicken wing reminds you that Shimomura now calls Thailand home. The time he spent in European cities like Paris and Copenhagen also gets a nod through a delicious camembert ice cream with caramelized walnuts. —Vincent Vichit-Vadakan
