Chef Thav Phouthavong may have only just taken over the helm at one-Michelin-starred 80/20, but he is already leaving his mark. The tasting menu starts on a take-no-hostages spice level with his punchy amuse-bouche, followed by ceviche served on a pool of nam jim (chili sauce) that will both blow your socks off and leave you craving for more. The British-raised chef is no stranger to Thai cuisine, but you can also feel, and taste, his Lao heritage shining through in innovative dishes like his refreshing khao soi lapin (yes, that’s tender, juicy rabbit) done in the Luang Prabang style in a clear broth with tomato. Inside the convivial dining room, the decor can be defined as cyberpunk meets Thai arts and crafts; an open kitchen runs the entire length of the space.
