It seems <a href="https://destinasian.com/category/japan/tokyo">Tokyo</a> has enough sushi restaurants to feed the entire globe twice over. Within the city’s busiest districts, you can find affordably priced sushi that shoots out on miniature bullet trains just steps from buzzy seafood izakayas serving tuna sashimi by the pile. But it’s places like Sushi Fuji Masa that promise something a little more special.
Hidden away on the second floor of a nondescript building a few minutes’ stroll from Ebisu Station, Ebisu Sushi Fuji Masa is an intimate 12-seat restaurant dedicated to the art of edomae sushi. It’s an authentic, Japanese-language-only experience, but what makes it notable is the warm, welcoming staff who are more than delighted to welcome visitors in to sample some of Tokyo’s finest cuts of seafood. Opt for the basic omakase (chef’s choice) course, which includes six tsumami snacks—the sushi equivalent of appetizers—12 pieces of nigiri sushi, an egg dish, miso soup, and a lively display of omotenashi (Japanese hospitality) by the head chef.
