An ode to the Big Apple and the big-name personalities who inhabit it, Manhattan, the black and gold jewel box off the soaring postmodern lobby at Conrad Singapore Orchard (formerly the Regent hotel), has been shaking up the local cocktail bar scene since 2014. Elegant service staff attired in all-black dresses welcome drinkers into a glamorous den of lacquered walls and leather chairs, where regulars order off-menu classics, or delight in spirits, bitters, and signature negronis aged in-house in more than 100 oak barrels. With 31 cocktails, the new Seasons of Manhattan menu invites guests to experience the changing seasons as New Yorkers do: a sensory journey that highlights seasonal differences in a country that has only one!

Start with a nod to spring break: Where the Boys Are is a crimson concoction of tequila and mezcal, lifted by citrus, plum, and blackberry, a sophisticated celebration of beer pong. Taking the classic student game to another level, a sheet of dehydrated plum portrays the splash as a ‘ping pong ball’ melon sphere appears to land in the glass. For fans of local flavors, the Cha in the Summer section of the menu is a grown-up take on bubble tea, with toasted soy milk, jasmine, kaoliang (a type of baijiu) and of course boba.
