A handsome black-and-white residence built in 1910 amid the leafy <a href="https://destinasian.com/singapore-botanic-gardens" target="_blank" rel="noopener" class="broken_link">Singapore Botanic Gardens</a>, E.J.H. Corner House has been a temple to French fine-dining since the late ’90s. Its latest occupant, Roia, is helmed by the first Indian chef to be knighted by the French for his culinary contributions. Priyam Chatterjee — conferred the Chevalier de l’Ordre du Mérite Agricole in 2019 — serves creative multicourse menus that are an ode to the flora of the surrounding gardens and classic Singaporean flavors.
Diners who bite into a translucent, ice cube–like amuse-bouche of kudzu toast topped with pata negra ham and flowers will be surprised by the hit of vadouvan, a French spice blend that traces its roots to colonial Pondicherry. (The morsel is an homage to the local curry puff.) The appetizer Snowfall in Singapore features melt-in-the-mouth Hokkaido scallop, yogurt, and finger lime, while the main course of Corners Flowers offers a peek into Chatterjee’s artistic inclinations. He serves the Japanese ginpo, a member of the cod family, with Jackson Pollock–inspired swirls of three differently colored sauces — beetroot, yuzu-calamansi, and smoked almond. Mix everything up and you get a delicious juxtaposition of tart, earthy, and creamy notes with the fatty fish. For more romantic vibes and floor-to-ceiling views of the lush greenery enveloping the restaurant, book a table in the glassed-in veranda on the second floor. —Mavis Teo
