Aussie chef Drew Nocente knows his way around a pass, so it’s little surprise that his newest venture tests his skills with an open-flame menu that turns up the heat in more ways than one. Backed by Italian tradition and spirit, the cozy Il Toro restaurant in Gemmill Lane is all dark wood and exposed brick, and within walking distance of <a href="https://staging.destinasian.com/travel-guide/singapore/dining-singapore">Chinatown</a>. 
Standout starters include the focaccia with beef tallow candle and the mackerel with whipped bone marrow and salsa verde. For mains, choose from meat or fish from the coals; a pairing with foie gras dirty rice is a must. Nocente’s cooking of meringue with a red-hot iron from the flame is a showstopper in both taste and flamboyant posts for the ‘gram. Come for lunch or dinner. —Alison Marshall
