This cinematic ode to India from an unabashedly <a href="https://www.firangisuperstar.com/?destinasian">firangi </a>(foreign) perspective fairly bursts with character and whimsy. Filled with vintage decor and furnishings, the four themed dining sections are by turns styled as a Raj-era officer’s club, an old railway carriage, a Rasjasthani palace, and a jungle lodge. The food, by Indian-Singaporean chef Raj Kumar, exhibits an equal amount of quirk, most of it successful. Try the This is Not Aloo Gobi, which reinterprets the classic potato-and-cauliflower curry with moreish potato cubes, roasted cauliflower florets, and masala compote on a bed of ghee-fried cauliflower couscous; and the Salvador Thali, a vivid pumpkin dish that will forever change your appreciation of the humble gourd. —Mavis Teo
