Former graphic designer Khun Tom has been quietly serving shots at <a href="https://www.facebook.com/Z1MPLEX?DestinAsian" class="broken_link">Zimplex Mixology Laboratory</a> for over a decade now. But if a bar that only serves shots sounds like some back-alley dive, nothing could be further from the truth. When you first enter Zimplex, located on the outskirts of historic Phuket Town, the retro space-age look is reminiscent of a Star Trek set. The bottles on the shelves are backlit and the translucent bar that runs the entire length of the narrow space literally glows. And that’s for a reason.
With a little prompting, Tom will guide you through the cocktail list as he explains his approach to making drinks. Order a Walaska, a spin on a classic Alaska that pays homage to a discerning drinking buddy named Wa. Tom deftly mixes colorful homemade infusions, while essences and oils are painstakingly applied to spirits and mixers with miniature squeeze bottles and eye droppers. The result is part mesmerizing performance art, part hypnotic lava lamp, all in a miniature shot glass. It’s as much about the show as it is about the drinks themselves, and many visitors end up capturing the breathtaking preparation of their drinks on video. —Vincent Vichit-Vadakan
