A lot of people whizz by the facade of L’Arôme by the Sea, located on the windy road that traverses the hills above Patong Beach, without realizing that they are missing some of Phuket Island’s most exacting and tastiest French cuisine. If the view street-side is nondescript, the interior, dominated by huge windows that frame front-row views of Kalim Bay, is anything but. You want to be seated in the sleekly modern dining room in time to catch the Andaman Sea sunset before the vast of expanse of water fades to black.
After the natural show, the culinary drama begins. Swiss-born chef Yannick Hollenstein sources prime ingredients like Tasmanian venison and Phuket lobster, that rotate on a regularly updated seasonal menu. Look out for clever trompe-l’œil like an edible “oyster shell” he recently served. You might even find a dish that nods to Hollenstein’s Alpine homeland, like smoky fondue or his own spätzle with butternut squash and Gruyère. Desserts are equally luscious; this Swiss chef also knows his way around chocolate and uses single-origin cacao grown right here in Phuket. —Vincent Vichit-Vadakan
