<a href="https://jamparestaurant.com/?DestinAsian">Jampa</a> has something of an unfair head start when it comes to farm-to-table dining. The anchor of the drop-dead gorgeous (and soon-to-open) Tri Vananda wellness complex, it’s located on the edge of the Pru Jampa Farm, which supplies Jampa and Michelin-starred sister restaurant Pru with some of their specialty produce. More importantly, it serves as a testing ground to see what grows well in Phuket’s not-always hospitable soil. At <a href="https://jamparestaurant.com/?DestinAsian">Jampa</a>, Dutch chef Rick Dingen takes full advantage of that location and those ingredients. But being healthy, sustainable, and farm-fresh doesn’t mean that dining here isn’t an indulgent experience. Expect distinctive foodstuffs like torch ginger and souring taling pling paired with seasonal produce grown on-site or delivered by local suppliers, like suckling lamb, black grouper, or jicama.
On Saturday afternoons, you can book a lunch experience at the farm itself via a weekly pop-up called Hideaway by Jampa. Take home a jar of Dingen’s ever-changing spicy sambal, which proves his dedication to rescuing the food that doesn’t make it onto his menu while paying tribute to his time in Indonesia. —Vincent Vichit-Vadakan
