The menu, created by Michelin-starred Chef Niko Romito, in collaboration with Resident Chef Alessandro Mazzali, features eight exclusive signature dishes that blend Italian tradition with the soul of Bali. Each dish draws inspiration from the island’s landscape and culinary heritage, highlighting locally sourced organic produce and herbs harvested from the Bvlgari Resort Garden.
MENU FORMATS AND HIGHLIGHTS
Guests can choose from three curated dining experiences:
4-course “I Classici” Tasting Menu: A refined journey through regional Italian delicacies. Highlights include tortelli with smoked Balinese ricotta, coral trout with scallops and prawns, and Chef Romito’s signature Bread and Chocolate dessert made with Balinese cacao. 
7-course Tasting Menu: A deeper exploration into contemporary creations such as scallops with prawn cream, poached black cod with cod milk, Wagyu beef fillet scented with local black pepper, and a refreshing finale of wild berry sorbet, lemongrass mousse, basil, and meringue. 
À La Carte Menu: Seasonal Italian favorites with local nuances, from snapper carpaccio with green pepper and roasted tuna loin with fennel and citrus, to handmade tortellini with duck sauce and the iconic Spaghetti e Pomodoro.
DESIGN AND ATMOSPHERE
With only 24 seats, the restaurant creates an intimate dining experience set against panoramic ocean views. The space is softened by a reflection pool and subtle lighting, immersing diners in the tranquil beauty of Bali’s coastline.
