Buzzy even in the middle of the week, the glamorous drinking den at Cotai’s <a href="https://destinasian.com/hotels-the-st-regis-macao/" target="_blank" rel="noopener">St. Regis hotel</a> draws patrons for its creative tipples, nightly live jazz performances (Brazilian lead vocalist Jandira Silva has acquired a loyal fan base), and suave interiors akin to a retro gentlemen’s club. Prolific Hong Kong designer Steve Leung and his studio have deftly matched dark oak-panelled walls and fern green leather booth seats with patterned marble floors in black and white. Behind the bar, a gleaming hand-painted mural depicts an 1850s view of <a href="https://destinasian.com/luxury-travel/spotlight/discover-macau" target="_blank" rel="noopener">Macau</a>, blooming lotus flowers, and the city’s Sino-Portuguese architectural heritage.
Equally enticing are the stellar cocktails by Taiwanese head mixologist Kevin Lai. Inspired by his visit to New York’s MoMA, Modern Art mixes gin and elderflower liqueur with guava and lime juice for a light and summery result. Meanwhile, the rum-based Macao Egg Tart is a sweet, milk-washed drink that riffs off the city’s signature pastry. Be sure to end the night with a Maria do Leste—arguably the tastiest version of the Bloody Mary anywhere. The inclusion of piri-piri chili, pink peppercorns, Indian paprika, Chinese black vinegar, and cinnamon powder gives it a smoky, complex flavor and a discernible kick.
