Se’i, a West Timorese smoked meat preparation, is currently having its moment in the sun; Noesaka’s version uses grilled U.S. <a href="https://destinasian.com/partner-content/reinventing-seasonal-flavors-at-john-hardys-the-long-table-bali/">beef short ribs</a>. Another must-try? Trancam from East Java, an aromatic medley of tossed vegetables and tempeh tossed with lemon basil, freshly grated coconut, and lesser galangal. While Sumatra is represented by Padang-style satay and Acehnese prawn-and-pineapple curry, a taste of Sulawesi can be had through the fiery Manadonese squid or braised chicken woku, alongside Makassar specialties like hearty beef-rib stew iga pallubasa and boneless fried milkfish smothered in a sweet-savory parape spice paste.
