Bartending veterans Agung Prabowo and Roman Ghale, previously of <a href="https://theoldmanhongkong.com/?DestinAsian">The Old Man</a>, now run Penicillin and dive bar Dead&amp; with their equally entrepreneurial wives, Laura Prabowo and Katy Ghale. The former venue is a snug 25-seater spot that explores the limitless possibilities of sustainable cocktail-making. Entering through a tiled laboratory space, guests will see upcycled fittings from old neon signs to tabletops made from local trees felled by a 2017 typhoon. The experimental drinks take a similar zero-waste approach, using leftover kitchen ingredients that are ground, fermented, or processed in mind-boggling ways.
Recycled seashell vodka, citrus hydrosol, and salted coconut cordial go into “The Original” by Agung Prabowo, a savory, tangy delight rich with umami ocean flavor and some discernible heat from spiced cherry tomato. Ice is swapped out for deep-frozen avocado seeds sourced from a nearby Mexican restaurant in the sweet-sour One Penicillin, One Tree: a foamy light-pink concoction of white chocolate whisky, strawberry brine, and coconut kefir. (Extra fruitiness comes from the crispy wafer that combines honey and papaya seeds with dehydrated strawberry.) The name points to a collab with ecoSPIRITS—a closed-loop spirits distribution service—and Green Steps Group, whereby each serving of the drink is matched with the planting of one native tree in the forests of Indonesian Borneo, Laura Prabowo’s ancestral home region. —James Louie
