Pinstripe Bar, the <a href="https://www.pinstripebar.com/speakeasy-bar-bali/?destinasian">speakeasy-style haunt</a> at Ubud’s quietly flashy <a href="https://www.viceroybali.com/en/?destinasian">Viceroy Bali</a> resort takes its creative cue from the Prohibition era and fuses it with the nostalgia of 1930s Bali. Lamp-lit billiard tables, studded leather couches, and a towering cabinet full of aged whiskies and limited-edition gins set the scene. So too a sunken bar where head barman Panji Wisrawan and his team work their mixology magic in cocktails that reference famed Bali personalities. The Prince, named for Ubud royal Tjokorda Agung Soekawati, is a smoking concoction of Cognac-infused Thai tea with Campari and Dom Benedictine. The Dancer, a nod to Rosa Rolanda, an American artist, dancer, and proponent of all things Balinese, mixes tequila and Aperol with raspberry and yuzu for a twist on the brandy sour. Many punters will indulge in a cocktail or two at <a href="https://www.pinstripebar.com/speakeasy-bar-bali/?destinasian">Pinstripe</a> before an evening at <a href="https://www.aperitif.com/?destinasian" target="_blank" rel="noopener">Apéritif</a>, the Viceroy’s much-accoladed French degustation restaurant. But Pinstripe also serves a full Euro-leaning menu including oysters, mezze platters, and pasta, so staying put until the wee hours is tempting too. —Penny Watson
