Fancy a dragon fruit martini? Enjoy it alfresco with front-seat views of the Indian Ocean on the expansive rooftop of the OMA-designed Potato Head Studios, a hotel-slash-cultural venue at the brand’s seaside creative playground. Sundowners here play up the agricultural bounty of the island: tamarillo and homemade torch ginger flower liqueur are shaken with Venezuelan Diplomático white rum to create the Tropicalismo cocktail, while the addition of Balinese arak puts a local spin on popular drinks like Penicillin and Southside. As the skies turn dusky gold and lavender, you can also nibble on tapas-sized bites at the 22-meter bar: think ceviche and papaya salad or pork belly satay served with green rice grilled in a parcel of banana leaf. Potato Head gets top marks for repurposing waste in imaginative ways, and at Sunset Park, powdered oyster shells from the beach club’s Ijen restaurant have been mixed with resin to make floor lamps, while 600 kilograms of pulverized plastic are embedded into a sculptural concrete bench. —James Louie
