La Dame de Pic

Gold-rimmed mirrors and pink pastel sofas characterize this one-Michelin-starred restaurant in the iconic Raffles Hotel. It’s the first Asian outpost for celebrated chef Anne-Sophic Pic, who grew up in her family’s restaurant in Valance, southeastern France. She has followed in the footsteps of her father and grandfather, becoming the third generation to earn the coveted Michelin star rating. La Dame de Pic differs from its London and Paris counterparts as it presents refined French fare with a Singaporean splash. Diners choose between the five-course “Experience” set or the seven-course “Elegance,” both of which come with add-on drinks pairings. The restaurant does a superb job at highlighting women in the F&B industry: crisp and light Essentielle champagne is sourced from French winery Elise Dechannes, while the Saison de Pic, a refreshing lager made with roselle and hibiscus, comes courtesy of a female craft brewer. Signature dish Les Berlingots—mushrooms wrapped in dumpling skins and served with pandan leaves and edible flowers—is inspired by Singaporean bak chor mee or minced pork noodles. (La Dame de Pic uses pandan, ginger, and rosemary plucked from the Raffles’ spice garden outside the restaurant.) Another stellar option? Pic’s pork rack with carrot and passion fruit sauce.
