This festive season, John Hardy Seminyak invites guests to experience a rare culinary celebration at Long Table, renowned for its Indonesian-inspired communal lunches with a new holiday menu for 2025. Executive Chef Tomy Saputra has crafted a menu inspired  by the diverse flavors of Indonesia’s six great islands, including Sumatra, Java, Sulawesi, Bali, Nusa Tenggara, and Kalimantan.

A Culinary Journey Across the Archipelago
The 2025 Long Table Holiday Menu brings Indonesia’s diverse islands to the forefront through thoughtfully crafted dishes. Each course pays homage to a region’s distinctive culinary identity:
1. Bebek Hitam – Java 
Local duck slow-roasted over open fire, finished with caramelized Bumbu Madura.
2. Udang Sambal Asap – Sulawesi 
Steamed tiger prawns served with smoked mackerel and traditional roa sauce.
3. Serundeng Udang Papai – Kalimantan 
A fragrant blend of toasted coconut, garlic, chili, and dried shrimp.
4. Rumpu Rampe – Nusa Tenggara 
A colorful sauté of papaya leaves, moringa, banana blossom, and chayote.
5. Roroban – Bali 
An ancient Balinese soup of young papaya and coconut water, cooked inside a young coconut.
6. Nasi Minyak Tumpeng – Sumatra 
Jasmine rice enriched with chicken fat, toasted garlic, and turmeric leaves, presented in a traditional tumpeng cone.
<h5>A Sweet Ending</h5>
The feast concludes with Es Campur, shaved ice prepared tableside with traditional toppings and syrups—a nostalgic celebration of Indonesian street-style desserts—followed by tea or coffee.

Stretching across an open-air pavilion, it encourages conversation, discovery, and shared celebration—embodying the spirit of the festive season.
