It’s a rarity in Singapore to find a bar dedicated to live music, in particular in the post-Covid era. But here at Cool Cats those pandemic fears are all forgotten as patrons gather to watch an ever-changing roster of performers. Looking out to auditorium-style seating with some tables in the back, the small stage area is the main event, with local and international musical acts ranging from jazz to R&B playing to a dedicated and loyal fan base. Cocktails, meanwhile, have been designed to elevate and accompany the musical experience. They are artisanal, elegant, and very strong. Red Clover—named after an exclusive 1890s gentlemen’s club that gathered monthly to discuss topics like politics and literature—delivers a sweet balance of gin, fresh lemon juice, mixed-berry reduction, and aquafaba. For something a little different, the Truffle Pisco Negroni mixes Campari, truffle fat-washed Pisco, and aromatized wine into an intensely savory concoction that’s finished with a parmesan tuile. —Karen Fong
